15 Minute Chicken Pesto Stir-Fry

Use seasonal vegetables with some Genoese pesto or homemade pesto. Change chicken to any other protein source such as tofu, beans, beef, lamb or eggs.

15 Minute Chicken Pesto Stir-Fry



Prep time




  • 500g chicken breast, cut into chunks

  • 1 onion, diced

  • 3 garlic cloves, diced

  • 1 broccoli, cut into florets

  • 2 carrots, cut into sticks

  • 2 capsicum, sliced into thin strips

  • 150g pesto

  • 1 tbsp extra virgin olive oil

  • 200g cherry tomatoes, halved

  • Salt/ pepper


  • Heat a fry pan over medium heat. Add in the olive oil, garlic, onions, carrots and chicken. Cook for 5-10 minutes.
  • Add in the remaining ingredients (except the pesto) and cook for another 10 minutes. Add the pesto and mix to combine, cooking on low heat for 3-5 minutes or so. Season to taste.
  • Enjoy on it’s own or with rice/ quinoa/ sourdough bread.
