Use seasonal vegetables with some Genoese pesto or homemade pesto. Change chicken to any other protein source such as tofu, beans, beef, lamb or eggs.
15 Minute Chicken Pesto Stir-Fry
500g chicken breast, cut into chunks
1 onion, diced
3 garlic cloves, diced
1 broccoli, cut into florets
2 carrots, cut into sticks
2 capsicum, sliced into thin strips
1 tbsp extra virgin olive oil
200g cherry tomatoes, halved
- Heat a fry pan over medium heat. Add in the olive oil, garlic, onions, carrots and chicken. Cook for 5-10 minutes.
- Add in the remaining ingredients (except the pesto) and cook for another 10 minutes. Add the pesto and mix to combine, cooking on low heat for 3-5 minutes or so. Season to taste.
- Enjoy on it’s own or with rice/ quinoa/ sourdough bread.
