Ambrosia

Ambrosia is the classic kiwi BBQ bring-a-long. This simple ambrosia recipe is easy to prepare, just ten minutes in the morning, and by the time the BBQ rolls around the marshmallows will be perfectly soft from the time in the fridge. Use fresh berries or frozen if you prefer.

Ingredients

  • 900g unsweetened Greek yoghurt (my go-to is The Collective straight up probiotic yoghurt) or use coconut yoghurt (dairy free option)

  • 1 large punnet of strawberries, cut in halves

  • 1 cup blueberries

  • 250ml cream or swap for coconut yoghurt (dairy free option)

  • 1/2 bag of marshmallows

  • 100g Whittaker’s white chocolate (or DF chocolate)

  • 1 tsp cinnamon

Directions

  • Slice strawberries and cut the marshmallows in halves. Bash the chocolate or break into small chunks.
  • Whip the cream then fold into the yoghurt. Add the remaining ingredients and mix to combine.
  • Leave in fridge to set for a few hours. Take out and serve in small glass jars.
