This fresh, tasty, simple salad will make a great side to your main summer dishes! BBQ season is about to kick off!

Simple Summer Salad

Ingredients

  • 1 kumara, peeled and chopped into chunks

  • 1 red onion, chopped into chunks

  • 200g cherry tomatoes, halved

  • 1 bag of baby cos lettuce

  • 1 avocado, sliced

  • 1 orange, chopped into small chunks

  • 1/4 cup toasted sunflower/pumpkin seeds

  • For the dressing
  • 1/4 cup apple cider vinegar

  • 1/4 cup extra virgin olive oil

  • 2 Tbsp honey

  • 2 tsp wholegrain mustard

Directions

  • Pre-heat the oven to 180 degrees C and pre-line a baking tray with baking paper. Place the kumara and red onions on the baking tray and drizzle with olive oil. Bake in the oven for 20 minutes until cooked.
  • Prepare the salad by chopping up all the ingredients. Toast the seeds by heating a fry pan on low heat with some olive oil. Cook them until nicely toasted (about 3-5 minutes).
  • Prepare the dressing by placing all ingredients in jar and shake to combine.
  • Combine all ingredients together then top with the toasted seeds. Season to taste. Enjoy x
