Paprika Prawns with Cauliflower Rice

Another 15 minute meal to whip up for a quick and easy dinner or lunch option for the week! If you aren’t a fan of prawns then swap for any other protein source.

Paprika Prawns with Cauliflower Rice

Ingredients

  • 500g raw prawns

  • 1 Tbsp paprika

  • 3 garlic cloves, finely chopped

  • 50g butter (or swap for a dash of olive oil if you are dairy free)

  • 1 head cauliflower

  • 3 cups mushrooms, chopped finely

  • 1 capsicum, thinly sliced

  • 3 carrots, cut into sticks

  • 2 eggs

  • Dash of GF soy sauce

  • Dash of GF sweet chilli sauce

  • Small bunch of coriander

Directions

  • Grate the cauliflower using a food processor grater or a normal grater.
    Heat a fry pan over medium heat with 1 tbsp olive oil. Cook the carrots, capsicum and mushrooms for a few minutes.
  • While this is cooking, heat another fry pan over medium heat with the butter (or oil). Add the garlic and prawns and cook for 5 minutes. Sprinkle the paprika on top and stir.
  • Add the grated cauliflower to the vegetable pan and mix to combine. Add in a dash of soy sauce and the 2 eggs. Mix and cook for another couple of minutes.
  • Serve the cauliflower rice with the prawns on top and garnish with coriander. Season to taste.
