One Tray Bake Dukkah Chicken with Vegetables

Who else loves a one tray bake dish which takes minimal time to prepare and cook? I do! You can use any spices/ herbs that you have or just plain salt/ pepper with a bit of olive oil. I used some Dukkah seasoning (which you can get from the supermarket) as I love the taste of this!

One Tray Bake Dukkah Chicken with Vegetables



Prep time




  • 2 medium chicken breast, cut in half (or 4 x chicken thighs)

  • 2 capsicum, sliced in chunks

  • 1 courgette, sliced

  • 1 bunch asparagus, de-steamed and chopped

  • 1 medium kumara, chopped into small chunks

  • Extra virgin olive oil

  • 2-3 Tbsp Dukkah

  • 1 tsp paprika

  • Salt & pepper


  • Pre-heat the oven to 180 degrees Celsius on bake and pre-line an oven tray with some baking paper.
  • After prepping ingredients, place the chicken and vegetables on the tray. Drizzle with olive oil.
  • Season the chicken breast with Dukkah and the vegetables with paprika and salt/ pepper.
  • Bake in oven for 20-25 minutes until chicken nice and tender.
  • Serve with extra spinach/ kale and some toasted pumpkin/ sunflower seeds.
