Who else loves a one tray bake dish which takes minimal time to prepare and cook? I do! You can use any spices/ herbs that you have or just plain salt/ pepper with a bit of olive oil. I used some Dukkah seasoning (which you can get from the supermarket) as I love the taste of this!
One Tray Bake Dukkah Chicken with Vegetables

2 medium chicken breast, cut in half (or 4 x chicken thighs)
2 capsicum, sliced in chunks
1 courgette, sliced
1 bunch asparagus, de-steamed and chopped
1 medium kumara, chopped into small chunks
Extra virgin olive oil
2-3 Tbsp Dukkah
1 tsp paprika
Salt & pepper
Directions
- Pre-heat the oven to 180 degrees Celsius on bake and pre-line an oven tray with some baking paper.
- After prepping ingredients, place the chicken and vegetables on the tray. Drizzle with olive oil.
- Season the chicken breast with Dukkah and the vegetables with paprika and salt/ pepper.
- Bake in oven for 20-25 minutes until chicken nice and tender.
- Serve with extra spinach/ kale and some toasted pumpkin/ sunflower seeds.
