Lemon & Macadamia Slice

Gluten and dairy free with a hint of lemon for those sweet lovers. Use up those lemons before they go out of season!

Lemon & Macadamia Slice



Prep time




  • For the Base
  • 1 cup dates

  • 1 1/2 cups desiccated coconut

  • 1 cup almond meal

  • 2 Tbsp coconut cream

  • 1 Tbsp peanut butter

  • For the Topping
  • 2 cups macadamias

  • 2 Tbsp honey

  • Zest and Juice of one lemon

  • 3 Tbsp coconut oil

  • 1 Tbsp coconut cream


  • Line a 20cm loaf tin with baking paper.
  • Soak the dates in hot boiling water for 10 mins. Drain the water.
  • Add the dates into the blender and mix. Add remaining base ingredients into blender and combine/ mix until it resembles a crumbly mix. Press the mixture firmly into the base of the prepared tin.
  • Place macadamias into blender and blend until smooth. Add the remaining ingredients, blend and then pour over base.
  • Place in freezer to set. Slice into 10 small slices. Eat and enjoy x
