Honey Roasted Carrots

500gms carrots, washed and and cut in chunksÂ
3 garlic cloves, slicedÂ
1 Tbsp extra virgin olive oilÂ
1 Tbsp Manuka honey (can use maple syrup as a vegan option)
3 sprigs thyme, chopped salt/pepperÂ
Directions
- Preheat oven to 180 ºC. Line a baking sheet with some baking paper.Â
- In a bowl, mix all the ingredients together, except the carrots. Add the carrots and rub the ingredients into the carrots.Â
- Place carrots on baking sheet and pour the rest of the sauce over the carrots then season with a little bit of salt/ pepper.Â
- Roast for 15 mins or until cooked to your liking, watching that they don’t burn. Remove and serve as a delicious side meal.
