This egg dish is packed with loads of greens which contain an abundance of antioxidants and phytochemicals, as well fibre. Serve with some healthy fats like avocado and you’ve got yourself a well-balanced meal.

Green Frittata



Prep time




  • 1.5 small zucchini, thinly sliced

  • 1/2 large spring onion, finely sliced

  • 1/2 small broccoli stem, grated

  • 1 small handful of baby spinach

  • 1/2 bunch fresh parsley, finely chopped

  • 1/4 cup fresh basil, finely chopped

  • 4 large organic eggs

  • 1/2 cup almond milk

  • Extra virgin olive oil to drizzle

  • Salt & pepper


  • Preheat the oven to 160 degrees Celsius.
  • Mix all ingredients together in a bowl except the zucchini.
  • Pour all ingredients into an oven proof dish, ensuring the vegetables are completely covered by the egg mixture.
  • Layer the zucchini on top.
  • Drizzle with olive oil and season with salt and pepper.
  • Bake until firm, about 20-25 minutes.
  • Serve with some healthy fats like half an avocado, goat’s feta or a sprinkle of seeds.
