Gado Gado (Vegetarian Satay)

I have been to Bali several times and just loved ordering the Gado Gado over there which is basically a vegetable bowl drizzled in satay sauce! So I decided to create my own version. You can use any vegetables you have in your fridge.

Gado Gado (Vegetarian Satay)

Ingredients

  • 2 carrots, chopped into sticks

  • 1/4 head cabbage, sliced

  • 2 cups mushrooms

  • 1 capsicum, sliced thinly

  • 1 cup cooked basmati or brown rice

  • 1 spring onion, chopped finely

  • 4 boiled eggs, chopped in halves

  • For the Satay Sauce
  • 2 Tbsp peanut butter

  • 2 Tbsp kecap manis (or 1 1/2 Tbsp soy sauce and 1/2 tsp honey)

  • 1 tsp fish sauce

  • 1 Tbsp sweet chilli sauce

  • 1 garlic clove

  • 100ml coconut milk

Directions

  • Cook the mushrooms and cabbage in non-stick fry pan over medium heat with some olive oil for 5 minutes until cooked to your liking.
  • Prepare the rice and boiled eggs.
  • For the sauce: place all ingredients into a nutri-bullet or blender and mix until smooth.
  • Prepare the vegetable bowls by adding all your ingredients into the bowl then drizzling the satay sauce on top and garnish with spring onions. Season to taste.
