Delicious, easy and nutritious salad for the summer BBQ season! Serves 4 as a side salad.
Cucumber, Tomato & Basil Salad

400gm cherry tomatoes, halved
1 cucumber, sliced into quarters
Large handful of basil, chopped
1 block of feta, crumbled
1/2 red onion, thinly sliced
3 Tbsp extra virgin olive oil
2 Tbsp balsamic vinegar
Pinch of salt and pepper
Directions
- Combine all ingredients into a salad bowl.
- Season to taste and then drizzle olive oil and balsamic vinegar on top.
- Toss together and enjoy x
