French toast has to be one of our favourite breakfasts! Most of the time you feel sick after eating French toast out at a cafe or restaurant because it is full of refined sugar! We have created a healthier version of this dish that tastes just as good, makes you feel satisfied, nutrient dense and will not make you feel sick afterwards!
Coconut French Toast

4 Â slices of coconut bread (or any GF/ paleo/ wholemeal bread)Â
1 egg
1/2 cup unsweetened coconut milkÂ
1/2 tsp organic vanilla essenceÂ
1/2 tsp cinnamonÂ
1 Tbsp coconut oilÂ
- Topping Suggestions
2 slices free range bacon, frozen berries, flaked almonds, shredded coconut, banana, coconut jam, maple syrupÂ
Directions
- Heat the coconut oil in a frying pan over medium heat.
- Combine the egg, milk, cinnamon and vanilla essence into a bowl and whisk. Dip the bread into the mixture and coat evenly on both sides. Add bread to frying pan and cook until brown on both sides.Â
- Lightly fry the bacon and banana in a different pan until cooked to your liking.
- Place 2 slices of bread on each plate and top with your favourite toppings! We used bacon, banana, flaked almonds, berries, maple syrup and shredded coconut!
