Coconut French Toast

French toast has to be one of our favourite breakfasts! Most of the time you feel sick after eating French toast out at a cafe or restaurant because it is full of refined sugar! We have created a healthier version of this dish that tastes just as good, makes you feel satisfied, nutrient dense and will not make you feel sick afterwards! 

Coconut French Toast

Ingredients

  • 4  slices of coconut bread (or any GF/ paleo/ wholemeal bread) 

  • 1 egg

  • 1/2 cup unsweetened coconut milk 

  • 1/2 tsp organic vanilla essence 

  • 1/2 tsp cinnamon 

  • 1 Tbsp coconut oil 

  • Topping Suggestions
  • 2 slices free range bacon, frozen berries, flaked almonds, shredded coconut, banana, coconut jam, maple syrup 

Directions

  • Heat the coconut oil in a frying pan over medium heat.
  • Combine the egg, milk, cinnamon and vanilla essence into a bowl and whisk. Dip the bread into the mixture and coat evenly on both sides. Add bread to frying pan and cook until brown on both sides. 
  • Lightly fry the bacon and banana in a different pan until cooked to your liking.
  • Place 2 slices of bread on each plate and top with your favourite toppings! We used bacon, banana, flaked almonds, berries, maple syrup and shredded coconut!
