Apple crumble has to be one of my favourite desserts! It is apple season now in New Zealand and what better way then to make some fresh homemade apple crumble. I stew the apples in some water with cinnamon then add a little bit of sugar (as I took these apples from my brothers tree so they were quite sour) then use the leftover apples to have with yoghurt or granola for my breakfast!

5-6 apples, cored and sliced
1 Tbsp cinnamon
1-1 1/2 cups water
1-2 Tbsp coconut sugar
- For the Topping
100g butter, softened
1/4 cup coconut sugar
1 1/4 cup spelt flour (you can substitute this for any other flour if you prefer)

- Place the apples, cinnamon, water and sugar in a pot over medium heat and cook until softened (approx. 10 mins or so).
- Pour the apple mixture into the greased tin.
- To make the topping, combine the ingredients in a bowl and mix with your hands until the consistency of the mixture is like a crumble. Make sure the butter is softened but not melted.
- Pour the crumble over the top of the apple mixture, sprinkle with cinnamon and bake for 25-30 minutes until the top is nice and crispy.
- Serve with a dash of cream, yoghurt or ice cream.
