Lemon & Macadamia Slice

- For the Base
1 cup dates
1 1/2 cups desiccated coconut
1 cup almond meal
2 Tbsp coconut cream
1 Tbsp peanut butter
- For the Topping
2 cups macadamias
2 Tbsp honey
Zest and Juice of one lemon
3 Tbsp coconut oil
1 Tbsp coconut cream
Directions
- Line a 20cm loaf tin with baking paper.
- Soak the dates in hot boiling water for 10 mins. Drain the water.
- Add the dates into the blender and mix. Add remaining base ingredients into blender and combine/ mix until it resembles a crumbly mix. Press the mixture firmly into the base of the prepared tin.
- Place macadamias into blender and blend until smooth. Add the remaining ingredients, blend and then pour over base.
- Place in freezer to set. Slice into 10 small slices. Eat and enjoy x
