I became inspired by this recipe from Tik Tok! It looked so simple and tasty! I am not a huge pasta fan just because when I do eat a large bowl, I often feel quite sick BUT this recipe was perfect at hitting the pasta craving (without feeling super full and bloated after). You can use any seasonal vegetables in this recipe so I chose capsicum, tomatoes and some green leafy vegetables.
Tomato, Capsicum & Feta Pasta

1 block of feta
150g wholemeal/ high fibre/ GF pasta
5-6 tomatoes or 400g cherry tomatoes
2 capsicums
2 large handfuls of silverbeet
Extra virgin olive oil
Salt & pepper
Small handful of basil leaves
Directions
- Pre-heat the oven to 180 degrees on fan bake and pre-line the tray with the baking paper.
- Chop the vegetables (except the silverbeet) and place them on the baking tray with the feta block in the middle. Drizzle olive oil on top and place in the oven for 25-30 minutes.
- Cook the pasta as per the instructions in water.
- As soon as the feta and vegetables are cooked then mix together and fold into the pasta.
- Add the silverbeet and cook for a further 5 minutes or so. Season to taste and garnish with basil.
