Paprika Prawns with Cauliflower Rice

500g raw prawns
1 Tbsp paprika
3 garlic cloves, finely chopped
50g butter (or swap for a dash of olive oil if you are dairy free)
1 head cauliflower
3 cups mushrooms, chopped finely
1 capsicum, thinly sliced
3 carrots, cut into sticks
2 eggs
Dash of GF soy sauce
Dash of GF sweet chilli sauce
Small bunch of coriander
Directions
- Grate the cauliflower using a food processor grater or a normal grater.
Heat a fry pan over medium heat with 1 tbsp olive oil. Cook the carrots, capsicum and mushrooms for a few minutes. - While this is cooking, heat another fry pan over medium heat with the butter (or oil). Add the garlic and prawns and cook for 5 minutes. Sprinkle the paprika on top and stir.
- Add the grated cauliflower to the vegetable pan and mix to combine. Add in a dash of soy sauce and the 2 eggs. Mix and cook for another couple of minutes.
- Serve the cauliflower rice with the prawns on top and garnish with coriander. Season to taste.
