Say hello to the warmest, tastiest most perfect home cooked bowl of chicken soup. It’s full of colourful veggies, good for us protein, and is sure to take care of just about any cold that winter throws your way!
Super healthy, packed full of fibre, Vitamin C, Collagen and B Vitamins, this soup will boost your immune system affected by the cold weather! I made this in a Slow Cooker as it extracts all the gut healing properties out of the chicken bones and gives it so much flavour! You can even freeze some to take to work for an easy lunch idea!
Slow Cooker Chicken Soup

12-15 chicken drumsticks (approx 2 x packs)
4 stalks celery, chopped up
1 onion, sliced finely
1 Tbsp extra virgin olive oil
4 garlic cloves, chopped finely
1 leek, sliced finely
4 carrots, chopped up
2 parsnips, chopped
1 bay leaf
1 cup barley
4 sprigs of fresh thyme
6 cups chicken stock (low sodium) or broth
2 sprigs of fresh rosemary
Juice of one lemon
Salt & pepper to taste
Directions
- In the bowl of your crockpot/ slow cooker, combine the chicken stock, olive oil, onions, carrots, barley, parsnips, celery, leeks, bay leaf, thyme, rosemary, and a pinch each of salt and pepper. Add the chicken.
- Cover and cook on low for 5-6 hours or high for 4-5 hours.
- About 45 minutes before serving, remove the chicken from the soup. Remove the herbs and discard. Stir in the lemon juice. Shred the chicken and stir it back into the soup and cook for another 30 mins.
- Divide the soup amongst bowls and garnish with herbs or serve with sliced wholegrain bread and butter.
