Cooking the beef brisket in a slow cooker is not only time efficient but makes the meat fall apart when you dish up! This recipe is so simple so feel free to add your own touch but like to keep my recipes simple and easy to prepare as I understand everyone is time poor when it comes to cooking! I served this on mashed pumpkin (with a a little bit of coconut milk and butter) along with some sautéed greens and it tasted amazing.
Slow Cooked Beef Brisket

1kg beef brisket
1 onion, finely chopped
2 garlic cloves
1/2 cup red wine
Jar of passata sauce
6 bay leaves
2 cups beef stock
Salt and pepper
Directions
- Heat some oil in a large frying pan and fry the beef brisket approx 4-5 minutes each side until browned. Remove from the pan and set aside. Add the onions and crushed garlic stirring for 4-5 minutes until softened.
- Add the beef brisket, wine, passata sauce, beef stock, bay leaves garlic and onions into slow cooker. Season with salt and pepper and cook on low for approx. 6-8 hours.
- Remove the beef and seperate with two forks. Serve on pumpkin mash with sautéed greens, finish by drizzling the sauce over the top. Bon Appetite!
