I have recently made a rule in our house to incorporate “Meatless Mondays”. This hummus is a perfect accompaniment for any veggie dish. It goes well with vegetables fritters, egg based dishes, roast vegetable salad or stir-frys.
Roasted Kumara Hummus

1 medium kumara, chopped into small chunks
1 can chickpeas, rinsed and drained
2 Tbsp tahini
1 lemon, juice squeezed
2 cloves garlic
1 tsp cumin
1/4 cup olive oil
1/2 tsp salt
Directions
- Preheat the oven to 180°C and pre line a tray with baking paper. Place kumara across baking paper and drizzle with some olive oil then bake for 20 minutes until cooked through.
- Place the kumara, chickpeas, tahini, lemon juice, garlic, cumin , salt and olive oil in a blender and blend until smooth. Add in extra olive oil if you prefer a smoother consistency.
- Keep stored in fridge for up to 8-9 days and add into your meals for extra flavour and fibre.
