Chicken Cashew Nut Stir-Fry

- For the Stir-fry
450gm chicken breast
1 head broccoli, florets chopped
1 capsicum, chopped finely
1 onion, diced
2 garlic cloves, diced
1 tsp ginger, grated
1 courgette, chopped finely
1 bunch asparagus, chopped
1/3 cup cashews
2 cups cooked basmati rice
Coriander to garnish
- For the Sauce
3 heaped Tbsp Pic’s peanut butter
5 Tbsp tamari sauce
1 Tbsp ginger
2 Tbsp honey
1 Tbsp extra virgin olive oil
2 Tbsp water
Directions
- Heat 1 tbsp olive oil in a fry pan over medium heat. Sauté the onions, garlic and ginger then add the chicken and brown. Turn down to low heat.
- Add the vegetables and cook for another 5-7 minutes.
- Whisk the sauce ingredients together in a small bowl. Pour the sauce into the fry pan and stir to combine. Cook for another 3-5 minutes.
- Garnish with the coriander and cashew nuts. Serve on top of cooked basmati or brown rice.
