Chicken Fajita Bowl

My homemade version of this chicken fajita bowl is such an easy, quick and tasty lunch option to prepare for your week days at work!

Ingredients

  • 150g chicken, sliced up

  • 1/2 tsp cumin powder

  • 1/2 tsp paprika

  • 1/4 tsp salt

  • 1 Tbsp extra virgin olive oil

  • 1/2 red & 1/2 yellow capsicum, sliced thinly

  • 1/2 cup cooked basmati or brown rice

  • 1/2 cup beans

  • 1/2 avocado, chopped

  • 2 Tbsp sauerkraut

  • 1 cup spinach leaves

  • For the Dressing
  • 1 Tbsp Lime juice

  • 1 Tbsp extra virgin olive oil

  • 1/2 garlic clove

  • 1/2 tsp honey

  • 1/2 tsp coriander

Directions

  • Pre-heat a fry pan with the olive oil over medium heat cook the chicken and capsicum. Add in the cumin, paprika and salt. Mix to combine.
  • Prepare your bowl with the rice, beans, avocado, sauerkraut, spinach leaves and the cooked chicken and capsicum.
  • Mix the dressing ingredients together and drizzle over the top of the bowl.
