These scrumptious muffins taste like traditional bakery style muffins, but without the refined sugar. This took me 5 minutes to prepare (20 mins cooking time) so are easy to whip up for when you feel like a snack. A fresh-baked, tender, chocolatey gluten-free muffin that’s healthy and satisfying.
Jaffa Choc Chip Muffins

1 and 3/4 cups almond meal/ flour
1/2 cup coconut flour
1 tsp baking soda
1 tsp baking powder
1/2 cup butter
3 Tbsp honey (or rice malt syrup)
1 egg
1 orange, chopped into chunks
1/3 cup orange juice (I used 2 oranges- juice squeezed from them)
1 cup dark chocolate chips
Directions
- Preheat oven to 180 degrees. Prepare a muffin tray with 10 paper liners.
- Cut orange into small chunks and place in a blender with the orange juice. Add egg, butter and honey. Blend and pour into a medium sized bowl.
- In a seperate bowl, mix the almond meal, coconut flour, baking soda, powder and chocolate chips. Mix dry mixture with orange batter until well combined. Try not to over-mix.
- Fill muffin trays with mixture and place in oven for 20 -25 minutes. Remove from tins after cooling for 5 minutes.
