Grated Beetroot and Carrot Salad

This quick, tasty and fresh salad will be the perfect side dish for any main or great lunch option to take to work! Make a large bowl of this to bring to work for the week.

Grated Beetroot and Carrot Salad



Prep time




  • 3 beetroot, grated

  • 7-8 carrots, grated

  • 1/2 cup chopped parsley or mint

  • 1/4 cup raisins

  • 1/4 cup sunflower seeds

  • 1/4 cup pumpkin seeds

  • 1/2 cup crumbled reduced salt feta

  • 1 avocado, chopped

  • For the Dressing
  • 2 Tbsp Balsamic vinegar

  • 1 orange, juice squeezed

  • 1/4 cup olive oil

  • 1 Tbsp honey


  • To prepare the dressing: place all the dressing ingredients in a jar with a tight fitting lid. Shake well to combine.
  • To prepare the salad: in a large serving bowl, combine the beetroot, carrot, mint/parsley, raisins, seeds, avocado and salt and mix. Crumble feta over top. Pour over the dressing – toss again when ready to serve.
  • Serve with shredded chicken/ tuna/ boiled eggs/ tofu/ halloumi or any other protein source.
