Fish Curry

This is a very basic recipe with minimal ingredients but still tastes amazing! Add in any vegetables and swap the cream for coconut cream if you want to go dairy free.

Ingredients

  • 500g fresh white fish, chopped into chunks

  • 1 onion, diced

  • 3 cloves garlic, diced

  • 400-500g kumara, chopped

  • 2 cups fresh green beans

  • 1 capsicum, sliced thinly

  • 2 heaped Tbsp tomato paste

  • 1 cup cream (can opt for coconut cream to make DF)

  • 1.5 Tbsp curry powder

  • 1 tsp turmeric powder

Directions

  • Heat a fry pan over medium heat with a dash of extra virgin olive oil. Saute’ the onions and garlic for a few minutes.
  • Add in the curry powder, turmeric and tomato paste. Saute for another couple of minutes. Add the kumara, capsicum, green beans and cream. Leave to simmer on low for 20-30 minutes until kumara is cooked.
  • Add in the fresh fish and simmer on low for another 5 minutes (until fish is cooked which won’t take long).
    Season to taste and serve on rice or just as is.
