This refreshing summer salad will go great as a side to BBQ’s or any other main dish. This takes less then 5 minutes to prepare and contains no more then 5 ingredients!
Cucumber & Strawberry Mint Salad
1 whole cucumber, sliced very thinly
1 punnet of strawberries, cut in half or quarters
1/2 cup mint leaves
3 Tbsp olive oil
2 Tbsp balsamic vinegar
Pinch of salt
- Place all ingredients into a salad bowl and mix to combine.
- Season with salt and serve immediately or keep in fridge for up to 3-5 days.
- Get creative and use different dressings such as a raspberry vinaigrette or a lemon date dressing- Enjoy x
