Corn Fritters

This is a wonderful recipe is a quick and simple healthy meal that I love making at home. These fritters marry perfectly with fresh tomato salsa and smashed avocado scented with jalapeño and freshly squeezed limes.  It’s important that the heat is lovely and gentle which makes sure your fritter won’t burn and it cooks gently through the middle.

Corn Fritters

Ingredients

  • 1 x can of corn kernels

  • 3/4 cup wholemeal flour

  • 1 tsp baking powder

  • 1/2 cup of your preferred milk

  • 1 tsp paprika

  • 1 can black beans, rinsed and drained

  • 1 small bunch coriander

  • 1 avocado, chopped

  • 2 tomatoes, chopped

  • Pinch of salt and pepper

  • 1 lime, juice squeezed

Directions

  • Mix the corn, wholemeal flour, baking powder, paprika and milk in a bowl. Leave to set for approx 10 minutes.
  • While that is setting, make the black bean salsa. Mix together the black beans, avocado, coriander, tomato and juice squeezed from a fresh lime.
  • Heat a decent amount of oil in a heavy frypan and cook in batches over medium heat, allowing 1-2 heaped tablespoon per fritter. Cook until golden brown and cooked through (2-3 minutes each side), adding oil between batches as needed.
  • Serve with a yummy side salad, some blackbean salsa, beetroot hummus, sour cream or some homemade green dressing.
