Chia Seed Pudding

This quick and easy breakfast idea tastes delicious and is great for a -on-the-go option. Packed full of fibre, protein and healthy fats- this is defiantly a breakfast option that will full you up for a few hours. Add your own toppings but my favourite are berries, banana and some coconut yoghurt! 

Chia Seed Pudding

Ingredients

  • 6 Tbsp chia seeds 

  • 2 cups unsweetened coconut or almond milk 

  • 1/2 tsp vanilla extract

  • 1 Tbsp honey or maple syrup

  • Toppings
  • Bberries, sliced banana, coconut yoghurt, granola, cinnamon, shredded coconut

Directions

  • In a bowl or mason jar, mix together chia seeds, milk, honey and vanilla. If you’re using a mason jar, you can put the lid on and shake the mixture to combine everything.
  • Leave in fridge overnight or for a couple of hours.
  • When ready to serve, top with your favourite toppings! I used berries, banana, coconut yoghurt and 1 Tbsp granola.
