A tasty treat that can be stored in the freezer for those times you feel like a berry treat. Super easy to make and can be made DF if needed.
Blueberry Yoghurt Bars

1 cup Pitted Dates (soaked in warm water for ten minutes)
1 cup Pecans
1/2 cup Oats
1 1/2 cups Plain Greek Yoghurt (for DF use coconut yoghurt)
1/2 cup Frozen Blueberries (wild, divided)
Directions
- Line a baking dish with parchment paper.
- In a food processor or high-powered blender, add the dates, pecans, and oats. Blend until everything is combined into small crumbly pieces.
- Add the mixture to the baking dish to make the crust. Use your hands to press down and make an even layer.
- Add the yogurt and half of the blueberries on top. Use a spoon to spread the yogurt out into an even layer. Top with the remaining blueberries, cover and freeze for one to two hours to set or until the yogurt is frozen.
- Once set, let it thaw for a few minutes before cutting it into bars. Serve cold and enjoy!
