BBQ Chicken & Vegetable Skewers

This recipe will be a family favourite! Slow Cookers are going to be your best friend throughout winter and the perfect kitchen appliance for people who have limited time to cook! The chicken is wonderfully moist and very simple. Carving the chicken is very easy as it just falls off the bone! You can serve this with kumara mash, roast vegetables or brown rice.

Slow Cooked Roast Chicken

Ingredients

  • Skewers 

  • 500g Chicken, diced

  • Vegetables of your choice (red onion, courgette, capsicum, mushroom, eggplant etc) cut into bite-sized pieces 

  • Fresh salad greens of your choice (lettuce, tomato, cucumber etc)

  • Pita breads

  • Optional – balsamic vinegar, hummus, parsley 

Directions

  • Soak skewers in warm water for 10-30 min.
  • Chop chicken and vegetables into bite-sized pieces and then thread on to skewers.
  • Fire up the barbecue and cook kebabs until chicken is no longer pink and vegetables are caramelised (about 5 minutes each side). 
  • Prepare salad greens of your choice and toast pita breads.
  • Serve together with optional hummus/balsamic/parsley. Enjoy!
