This quick, tasty and fresh salad will be the perfect side dish for any main or great lunch option to take to work! Make a large bowl of this to bring to work for the week.
Grated Beetroot and Carrot Salad

3 beetroot, grated
7-8 carrots, grated
1/2 cup chopped parsley or mint
1/4 cup raisins
1/4 cup sunflower seeds
1/4 cup pumpkin seeds
1/2 cup crumbled reduced salt feta
1 avocado, chopped
- For the Dressing
2 Tbsp Balsamic vinegar
1 orange, juice squeezed
1/4 cup olive oil
1 Tbsp honey
Directions
- To prepare the dressing: place all the dressing ingredients in a jar with a tight fitting lid. Shake well to combine.
- To prepare the salad: in a large serving bowl, combine the beetroot, carrot, mint/parsley, raisins, seeds, avocado and salt and mix. Crumble feta over top. Pour over the dressing – toss again when ready to serve.
- Serve with shredded chicken/ tuna/ boiled eggs/ tofu/ halloumi or any other protein source.
