500g Chicken, diced
Vegetables of your choice (red onion, courgette, capsicum, mushroom, eggplant etc) cut into bite-sized piecesÂ
Fresh salad greens of your choice (lettuce, tomato, cucumber etc)
Pita breads
Optional – balsamic vinegar, hummus, parsleyÂ
Directions
- Soak skewers in warm water for 10-30 min.
- Chop chicken and vegetables into bite-sized pieces and then thread on to skewers.
- Fire up the barbecue and cook kebabs until chicken is no longer pink and vegetables are caramelised (about 5 minutes each side).Â
- Prepare salad greens of your choice and toast pita breads.
- Serve together with optional hummus/balsamic/parsley. Enjoy!Â
