Greek Lamb Koftas

500g lamb minceÂ
2 tsp mixed herbsÂ
2 cloves garlic, minced
1 tsp cumin
Pinch of salt & pepper
2 tsp olive oilÂ
5 cups of leafy greens of your choice (kale, spinach, lettuce etc)Â
1/2 telegraph cucumber, sliced
2 x tomatoes, cubed
1/2 red onion, diced
1/2 cup sundried tomatoes, chopped
1 x lemonÂ
4 x Wholemeal pita breads (optional)
Tzatziki / Hummus (optional)
Directions
- Mix lamb mince, herbs, garlic and spices in a large bowl with your hands. Form into koftas and set aside.Â
- 2. Place all salad ingredients in a large bowl, drizzle with olive oil and toss well.Â
- 3. Heat a large pan over a medium-high heat. Add a drizzle of olive oil and cook koftas (3-4 minutes each side) until browned. Alternatively, cook on the barbecue!Â
- 4. Toast pita bread until golden.Â
- 5. Serve together with fresh lemon wedges, tzatziki / hummus. Enjoy!Â
