Greek Lamb Koftas

This is a tasty recipe that is great for sharing or the upcoming BBQ weather. Simply serve with a side salad or in a wrap, they’re sure to be a staple in your diet.

Greek Lamb Koftas

Ingredients

  • 500g lamb mince 

  • 2 tsp mixed herbs 

  • 2 cloves garlic, minced

  • 1 tsp cumin

  • Pinch of salt & pepper

  • 2 tsp olive oil 

  • 5 cups of leafy greens of your choice (kale, spinach, lettuce etc) 

  • 1/2 telegraph cucumber, sliced

  • 2 x tomatoes, cubed

  • 1/2 red onion, diced

  • 1/2 cup sundried tomatoes, chopped

  • 1 x lemon 

  • 4 x Wholemeal pita breads (optional)

  • Tzatziki / Hummus (optional)

Directions

  • Mix lamb mince, herbs, garlic and spices in a large bowl with your hands. Form into koftas and set aside. 
  • 2. Place all salad ingredients in a large bowl, drizzle with olive oil and toss well. 
  • 3. Heat a large pan over a medium-high heat. Add a drizzle of olive oil and cook koftas (3-4 minutes each side) until browned. Alternatively, cook on the barbecue! 
  • 4. Toast pita bread until golden. 
  • 5. Serve together with fresh lemon wedges, tzatziki / hummus. Enjoy!
