My homemade version of this chicken fajita bowl is such an easy, quick and tasty lunch option to prepare for your week days at work!
Chicken Fajita Bowl

150g chicken, sliced up
1/2 tsp cumin powder
1/2 tsp paprika
1/4 tsp salt
1 Tbsp extra virgin olive oil
1/2 red & 1/2 yellow capsicum, sliced thinly
1/2 cup cooked basmati or brown rice
1/2 cup beans
1/2 avocado, chopped
2 Tbsp sauerkraut
1 cup spinach leaves
- For the Dressing
1 Tbsp Lime juice
1 Tbsp extra virgin olive oil
1/2 garlic clove
1/2 tsp honey
1/2 tsp coriander
Directions
- Pre-heat a fry pan with the olive oil over medium heat cook the chicken and capsicum. Add in the cumin, paprika and salt. Mix to combine.
- Prepare your bowl with the rice, beans, avocado, sauerkraut, spinach leaves and the cooked chicken and capsicum.
- Mix the dressing ingredients together and drizzle over the top of the bowl.
