This super easy vegetarian/vegan dish will be your new favourite #meatlessmonday dish!

Slow Cooked Bean, Lentil & Rice Chilli

Ingredients

  • 1 red onion, chopped

  • 2 garlic cloves, minced

  • 2 carrots, chopped

  • 1/2 head cauliflower, chopped into florets

  • 1 can tinned tomatoes

  • 1 can butter beans (or any other beans)

  • 1/2 cup brown lentils, dry

  • 1/2 cup black rice

  • 2 cups vegetable broth

  • 1 tsp coriander

  • 1 Tbsp cumin

  • 1 tsp oregano

  • 1 Tbsp chilli powder

  • 1 Tbsp paprika

  • 2 Tbsp olive oil

Directions

  • In a large pot, heat oil over medium heat. Saute onion, garlic, carrots, coriander and cumin for 3-5 minutes.
    Add the cooked mixture into your slow cooker. Top with all remaining ingredients and give it all a good stir.
  • Cover and cook on high for 3.5 hours or low for 5-6 hours.
  • Serve with sour cream, sliced avocado and coriander.
