Moroccan Lamb with Couscous & Harissa

500g lamb mince
2 Tbsp Moroccan seasoning
1 Tbsp coriander
2 garlic cloves, crushed
1/2 cup breadcrumbs
2 eggs
1 lemon, juice
1/2 cup Greek yoghurt
1 Tbsp cumin powder
1/2 cup mint leaves
1 cup couscous
1 head broccoli, florets chopped (steamed or raw)
1 small punnet cherry tomatoes, halved
1/2 cup unsweetened cranberries
1/2 cup pine nuts
1/3 cup Moroccan Harissa Sauce
Directions
- Combine the breadcrumbs, egg, lamb mince, crushed garlic, coriander, Moroccan seasoning and ½ lemon juice. Season well. Mix well and shape into 15-16 small balls. Chill for a good 15 minutes.
- Put the couscous in a large heatproof bowl, then add 1 Tbsp olive oil and ½ cup boiling water. Cover and leave for 5 minutes until cooked. Fluff up with a fork. Add in cherry tomatoes, broccoli, cranberries, pine nuts, mint leaves and mix to through.
- Heat 2 Tbsp olive oil in a frying pan over medium heat. Fry the balls for 6-7 minutes, turning now and then, until golden brown and cooked.
- Mix the cumin powder with the yoghurt. Serve the couscous salad topped with the meatballs. Drizzle the meatballs with 1-2 Tbsp cumin yoghurt, Moroccan harissa sauce. Squeeze the remaining ½ lemon on top of the dish and garnish with more mint leaves.
