Ginger Crunch Slice

Ginger is such a great spice and is loaded with so many nutrients and bioactive compounds that have so many benefits for your body. Ginger is a great anti-inflammatory spice so helps reduce inflammation in the body which is the underlying cause for most disease. This ginger slice is what I was really craving one day and it turned out pretty good! Easy to make and keep in the freezer for when you need that sweet snack.

  • 3/4 cup coconut thread

  • Medjool dates 6, pitted

  • 1/2 cup almonds

  • 1/2 tsp salt

  • 5 Tbsp fresh ginger

  • 6-8 Tbsp coconut oil, melted

  • For the Topping
  • 2-2.5 cups desiccated coconut

  • 3 Tbsp coconut oil

  • 2 tbsp fresh ginger

  • 2 tsp ground ginger

Directions

  • For the base: Place oats OR ground almonds, coconut thread,  medjool dates, ginger, almonds and salt in a food processor and blitz until a fine, crumbly texture.
