Ginger is such a great spice and is loaded with so many nutrients and bioactive compounds that have so many benefits for your body. Ginger is a great anti-inflammatory spice so helps reduce inflammation in the body which is the underlying cause for most disease. This ginger slice is what I was really craving one day and it turned out pretty good! Easy to make and keep in the freezer for when you need that sweet snack.
Ginger Crunch Slice

- For the Base
3/4 cup fine rolled oats* (you can also use ground almonds as a gluten-free alternative)
3/4 cup coconut threadÂ
Medjool dates 6, pitted
1/2 cup almonds
1/2 tsp salt
5 Tbsp fresh gingerÂ
6-8 Tbsp coconut oil, meltedÂ
- For the Topping
2-2.5Â cups desiccated coconutÂ
3 Tbsp coconut oil
2 tbsp fresh ginger
2 tsp ground ginger
1 Tbsp maple syrup or honeyÂ
Directions
- For the base: Place oats OR ground almonds, coconut thread, Â medjool dates, ginger, almonds and salt in a food processor and blitz until a fine, crumbly texture.
- Drizzle in melted coconut oil/butter and pulse until well combined and the mixture holds together when you pinch it between your fingers. Press mixture into the prepared baking tin, pressing down firmly with the back of a spoon or spatula. Â
- Place in freezer for 30 minutes or so while you prepare the topping.
- For the topping: Blend coconut and coconut oil in your food processor until it releases its oils and becomes a liquid. Only then add the remaining ingredients and blend lightly to combine.
- Press onto base and flatten with a spatula then place back in freezer for at least another hour or so.
- Slice into bars and keep stored in freezer for up to two weeks!
