Blueberry & Banana Baked Oatmeal

This recipe was inspired by blog My Kids Lick The Bowl, and has very few ingredients and is so yum that it tastes like you’re having dessert for breakfast. Serve on its own or pair with some Greek or Coconut yoghurt to bump up the protein or fat content to keep you feeling satisfied and full.

Blueberry & Banana Baked Oatmeal

Ingredients

  • 2 bananas

  • 2 cups rolled oats

  • 2 cups milk (of your choice)

  • 2 eggs

  • 2 Tbsp honey or maple syrup

  • 1 tsp vanilla

  • 1 tsp cinnamon

  • 1 cup frozen blueberries

  • 1/2 cup nuts or seeds (use any that you have in the pantry, I used sunflower seeds and walnuts)

Directions

  • Heat oven to 180 degrees Celsius and grease a square baking dish.
  • Slice banana and lay the slices on the bottom of the baking dish. Sprinkle the oats over the top of the banana.
  • In a separate bowl, whisk the milk, eggs, honey or maple, vanilla, cinnamon, nuts and seeds until fully combined and pour into the baking dish.
  • Add the blueberries to the top and place in the oven to bake for 25 minutes or until the milk has been absorbed.
