Spelt is a species of wheat arising from natural hybridisation which has taken place centuries ago. It is one of the original 7 grains mentioned in the bible and continues to be popular today for its nutritional value. Spelt has high water solubility, so its nutrients are easily absorbed by the body. Wholemeal spelt flour is made from whole grain and does contain gluten but its digested more effectively compared to normal flour.
These orange and chocolate cookies are delicious! I left the cookie dough overnight in the fridge but you can just leave it to set for an hour or so.
Orange and Chocolate Cookies

75g butter, melted
1/4 cup honey
1 orange, juice and zest
Pinch sea salt
1/4 tsp baking soda
1 3/4 cup wholemeal spelt flour
- For the Chocolate Coating
100g chocolate chips
1 Tbsp olive or coconut oil
Directions
- Place the wet ingredients (butter, honey, orange juice and zest) into a bowl and mix together.
Add in the baking soda and salt. - Add the spelt flour and mix until combined.
- Place the dough onto a piece of baking paper and roll into a log (I just wrapped the dough log up and then tied with some string to hold together).
- Place in fridge to set for an hour or overnight.
- Pre-heat the oven to 180 degrees and slice the dough into 12-15 even cookies. Place onto baking tray and bake for 10 minutes.
- Allow to cool on rack before you do the chocolate topping.
- For the topping: Melt the chocolate chips and oil over a small sauce pan or in the microwave. Dip and coat each cookie then place on a rack or baking paper in the fridge to set.
