A super easy and simple meal that takes less than an hour to prepare and have ready for the table. Have added cauliflower as it’s in season during Winter.
Chicken & Kumara Tray Bake

8-10 chicken drumsticks
3 large kumara
1/2 cauliflower head
2 Tbsp olive oil
2 tsp smoked paprika
1 tsp ground coriander
1/2 tsp garlic powder
1/4 tsp onion powder
1/4 tsp chilli powder
1 tsp sea salt
Directions
- Preheat oven to 190° C. Line a baking tray with baking paper.
- In a small bowl mix together the seasonings.
- Add kumara, cauliflower and chicken to the pan. Drizzle with olive oil and toss.
- Sprinkle the chicken legs, kumara and cauliflower with the seasoning. Toss well to spread out the seasoning. Arrange the chicken in between the kumara and cauliflower.
- Transfer to the oven and bake for 30-35 minutes, until chicken legs reach an internal temperature of at least 75ºC
