Chicken & Kumara Tray Bake

A super easy and simple meal that takes less than an hour to prepare and have ready for the table. Have added cauliflower as it’s in season during Winter.

Chicken & Kumara Tray Bake

Ingredients

  • 8-10 chicken drumsticks

  • 3 large kumara

  • 1/2 cauliflower head

  • 2 Tbsp olive oil

  • 2 tsp smoked paprika

  • 1 tsp ground coriander

  • 1/2 tsp garlic powder

  • 1/4 tsp onion powder

  • 1/4 tsp chilli powder

  • 1 tsp sea salt

Directions

  • Preheat oven to 190° C. Line a baking tray with baking paper.
  • In a small bowl mix together the seasonings.
  • Add kumara, cauliflower and chicken to the pan. Drizzle with olive oil and toss.
  • Sprinkle the chicken legs, kumara and cauliflower with the seasoning. Toss well to spread out the seasoning. Arrange the chicken in between the kumara and cauliflower.
  • Transfer to the oven and bake for 30-35 minutes, until chicken legs reach an internal temperature of at least 75ºC
