Slow Cooked Bean, Lentil & Rice Chilli

1 red onion, chopped
2 garlic cloves, minced
2 carrots, chopped
1/2 head cauliflower, chopped into florets
1 can tinned tomatoes
1 can butter beans (or any other beans)
1/2 cup brown lentils, dry
1/2 cup black rice
2 cups vegetable broth
1 tsp coriander
1 Tbsp cumin
1 tsp oregano
1 Tbsp chilli powder
1 Tbsp paprika
2 Tbsp olive oil
Directions
- In a large pot, heat oil over medium heat. Saute onion, garlic, carrots, coriander and cumin for 3-5 minutes.
Add the cooked mixture into your slow cooker. Top with all remaining ingredients and give it all a good stir. - Cover and cook on high for 3.5 hours or low for 5-6 hours.
- Serve with sour cream, sliced avocado and coriander.
