Fall in love with carrots again with this simple recipe! These carrots are tender, bursting with flavour and are the perfect side dish to any meal!
Honey Roasted Carrots
500gms carrots, washed and and cut in chunks
3 garlic cloves, sliced
1 Tbsp extra virgin olive oil
1 Tbsp Manuka honey (can use maple syrup as a vegan option)
3 sprigs thyme, chopped salt/pepper
- Preheat oven to 180 ºC. Line a baking sheet with some baking paper.
- In a bowl, mix all the ingredients together, except the carrots. Add the carrots and rub the ingredients into the carrots.
- Place carrots on baking sheet and pour the rest of the sauce over the carrots then season with a little bit of salt/ pepper.
- Roast for 15 mins or until cooked to your liking, watching that they don’t burn. Remove and serve as a delicious side meal.
