Christmas Spiced Cookies

These gluten free spiced cookies are the perfect holiday treat + they are super easy to make!

Christmas Spiced Cookies



Prep time




  • 1 1/2 cups almond meal or flour

  • 1/4 cup coconut flour

  • 1 tsp baking powder

  • 1 tsp baking soda

  • 1 tsp nutmeg

  • 1 tsp mixed spice

  • 2 eggs

  • 100g butter, melted

  • 1/2 cup coconut sugar

  • 2 Tbsp honey

  • 1 tsp vanilla extract


  • Pre-heat oven on fan bake to 180 degrees.
  • In a large bowl, mix the butter and coconut sugar until fluffy.
  • Once fluffy, add the eggs and honey. Beat well then add the vanilla extract.
  • In a seperate bowl, whisk together your dry ingredients. Once mixed, sift your dry ingredients into your larger bowl of wet, and mix until a dough forms.
  • Take heaping tablespoon pieces of dough, roll into a ball, and place onto a prepared baking tray. Flatten down with a fork and sprinkle with more mixed spice or cinnamon.
  • Place in oven for 12-14 minutes until cooked. Garnish with ginger icing sugar.
